Here is a Vermont sugarhouse at “full boil” making maple syrup. The steam rising from the roof vent is a common sight here in the springtime. My friend Matthew Wright wrote a poem on this very subject:
Sugar on Snow
Forty damn gallons
of sap for one gallon sweet.
Cold spring’s industry
works dilute joy from bare trees.
In Florida: oranges.
